Word on the street is that spring is here and we all know what that means; SALAD SEASON! There is nothing I love more than a salad on a spring afternoon, so I thought I would bring my newest obsession to the table. Speaking of, if you're bringing this to the table, be prepared to be everyone's favorite.
This salad is very vibrant, pretty, and fulfilling. For one, it is made with radicchio (everyone's new favorite lettuce, people now make pink cesar salad with it!) and it just screams spring. It is also paired with a raspberry vinaigrette which is the most ballsy vinaigrette I have ever made in my life. So If you're ready, let's jump into this quick and extremely easy salad.
radicchio & goat cheese salad
ingredients
1 head of radicchio
olive oil, for radicchio
1/4 pistachios, chopped
goat cheese crumbles or goat cheese log, crumbled
parsley, finely chopped
2 tsp dijon.
4 small cap fulls of raspberry vinegar (about 2 tbsp).
1/2 shallot, minced
salt and pepper
4-5 oz olive oil, for dressing
method
quarter the head of radicchio and massage with olive oil salt and pepper, set aside.
For the Vinaigrette:
combine dijon, raspberry vinegar, & shallot
drizzle in olive oil and whisk simultaneously until the vinaigrette forms.
season with salt and pepper to desired taste.
2. plate up the radicchio and top with crushed pistachios, crumbled goat cheese, and a drizzle of olive oil.
